I have been using CUPS on a couple of machines. It is relatively simple,
and has an administrative interface accessed through a web browser
(at http://localhost:631/) that also has full user documentation.
My suggestion would be to use Red Hat's lprng implimentation to set
up a print server (/sbin/printconf-gui is good), and only use CUPS
if you are printing from non-Red Hat machines.
